Trip Report: A Visit to the ATVS Cook Book

As I warned Billy Gomila in the Q&A with the And The Valley Shook thread on Dawg Sports, I stoleborrowed his Pepper-Marinated Flank Steak recipe for a Thursday Fajita Night this past evening and one simple word: FANTASTIC. I followed the recipe almost verbatim...well mama never taught me to use those fancy little spoons and dem cups with numbers on'em so I relied on pinches, dashes, and a good helpings instead of Tsp, TBsp and 1/4 cups. After trimming and slicing the Flank steak, I poured and kneaded the liquid in, spread the solids, and let it sit for 4 hours, placed it on a hot (propane - sorry Billy but charcoal was not an option, the host only had propane) grill and let it cook for about 10-14 minutes, sliced the meat, added some fresh bell peppers, onion, jalapenos (all grilled in a nice balsamic vinegar, cracked pepper, salt and Tony's), cheese and sour cream, wrapped in warm tortilla...OH my God..best fajita's north of the dry Rio Grande. Thank's again Billy and based on the comments from tonight I may be stealingborrowing more from the ATVS Cook Book
