I've never been one for poaching boudin. Throw that stuff on the grill until the casing starts to crisp up and split a little. YUM. And if you picked it up from a roadside joint on 190? ALL THE BETTER.
And if you don't know what boudin is, it's a spicy, preferably smoked pork sausage mixed with rice in the casing.
No. 13 Drunk Chicken
Another item that's not necessarily unique to LSU, and yet somehow still remarkably emblematic. A season, roasted chicken stuck on top of a beer can. Seriously though, when this is well done it is spectacular.
