A pork shoulder. A delicious dry-rub. Smoked, low and slow, until it is completely falling apart in your hands. Or, a pork shoulder, ground find and mixed with a delicious combination of rice and seasonings, then place in casing and then grilled. Legend has it there are some places that actually USE pulled pork to make their boudin.
